烤蛋糕

• 1/2 cup butter , f2 k5 p# Z! a/ d \, z
• 1 cup sugar
& @- A8 ]3 A9 a, h$ Q• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
. r3 i6 \( _7 d5 u• 1 1/2 cups sifted flour or all purpose flour (former is better)* M& [6 r4 X& X+ \
• 1 1/2 teaspoons baking powder / O; `0 n' Y' d$ ^7 g
• 4 eggs, well beaten: Y7 P2 x7 x' L/ l) X* Q

PREPARATION:
) c5 J2 F2 W- B" H( F' w2 |" FBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
9 m/ d" U' h0 A) r) ~Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
" b* Q6 w* g2 L" T5 e! vBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.2 h B8 ]* Z& L0 G6 u3 ~8 V4 s

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。 |0 y+ N; b* Q" A' J/ j6 @; r
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
