Beef with Broccoli

Beef with Broccoli( c7 N2 |& R8 d0 Y7 d
Serves 3 to 4

Ingredients:
" m( g+ Q8 X! B  u) M$ H, v# c3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

/ r5 I  ~$ `. w& t( Q, ~, H* tMarinade for Beef: 7 p- X5 ~3 `! k, W6 N
1 egg 7 b( Y& D6 e' c: E7 q
1/3 tsp (1.5 mL) salt! \2 d' V% e' N8 ~* f& ]0 N
1 Tbsp (15 mL) cooking wine; ?' M! r. L) E' v' a
1 Tbsp (15 mL) cornstarch, f0 |" x0 c; A
2 Tbsp water) _. e, U& E7 v  }, F1 v* ~5 X

  W& j3 t- p: ]/ j+ I1 1/2 Tbsp (20 mL) oil

" w3 F! K7 ^7 w" z1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices2 c% y. {. |: P1 V; v
1 cup (250 mL) cooking oil1 C! \' p7 S8 P0 l; ?
2 1/2 Tbsp (30 mL) oyster sauce  z$ w  I* v6 P* m: _6 a; ]
2 Tbsp (25 mL) light soy sauce
% `' a* O8 A* w) L7 s. b5 C3/4 Tbsp (10 mL) dark soy sauce
2 S4 Q8 w+ ^% U/ K# _1 Tbsp (15 mL) sugar
6 c0 [0 V, l, Z9 U2 da few drops of sesame oil; t! i/ E# X* S8 `- C
2 cloves garlic, crushed
  z: }! `) {) v* P7 f! E/ z+ z1 h1/2 cup (125 mL) chicken broth
" {; S) m6 Z  c, f- s3 ?; A; L% s2 Tbsp cornstarch (if desired)1 R9 D+ `' U0 P1 D" K# E# i
  f2 E5 I* R8 k+ l$ m! k; Z) f
Directions:
3 L8 u, ^* g0 O5 USlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. + c" n0 N& N) P! y5 y
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.& t/ D& c  t% B7 W5 F; `
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. _$ q+ o$ `# y' x- p9 oHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.2 N7 l; \5 b/ L4 ^( g, w/ c! i

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
